I used microwave oven transformers as chokes in my first iteration of MoFo amp, connected with the 240v input wires.
This is probably a stupid question, but here goes,
If I were to connect 1500v to the high voltage terminals (usually the output) would there still be the same inductance in the coils ?
The reason for asking is that the 193Q chokes I got for the 833a project are only rated at 1000v .

There probably is no gap, so the inductance is there in the absence of current. You will I suspect want current, so the inductance will collapse.
