Depending on the player it may or may not pass 24/192 data over the SPDIF. The default is usually not, and the player will downsample 24/192 to 24/96 prior to sending the data over the SPDIF.

In my experience Spotify works fine with the Touch. I will add that I don't use the embedded server in the Touch - I have LMS running and use the Triode plugin. Having used Squeezebox for many years I'd look at RasPi builds and run the lot using something like PiCorePlayer and use LMS as server.
